We have carried Andres Pablo’s coffee for many years, like most of our Guatemalan coffees. We’ve long centered Guatemala in our annual coffee selection, and consider it one of the most underrated coffee growing regions in the world. There may be no exotic varietals or experimental processing on offer, but the coffees always arrive tasting sweeter than any other origin. Unfortunately coffee growing can be very precarious, labor for picking can be difficult to secure as many migrate for work instead, and even with specialty prices, these wages eat into any potential profit.

Huehuetenango, Guatemala

Andres is a member of the ASIAST co-operative, a Huehuetenago group who work collectively to farm more ecologically, improve coffee quality, and access specialty buyers. His operation is fairly typical: he grows Caturra and Bourbon varietals on his farm that is slowly transitioning towards a more climate resilient model. He avoids chemical herbicides, composts his cascara amongst his trees, and processes his cherry himself, favoring a 24 hour seed fermentation before washing and drying to ideal moisture levels.
