This coffee comes from Gilberto Ramirez, from his farm in the township of Tuiboch, near the shores of the Río Ocho in the Todos Santos Cuchumatán municipality in the department of Huehuetenango. Gilberto is a long-term member of the ASODIETT cooperative.

52 year old Gilberto has worked in coffee since he was 16 years old, when he purchased his first parcel. Now, he has six different parcels- each ranging between 4 and 6 cuerdas- 5
cuerdas is about half a hectare. He has caturra, pache verde, and anacafe 14 coffee varieties on his parcels. To shade the coffee trees, he has chalum, avocado, and citrus trees including lime, lemon, and oranges. To process the coffee, he de-pulps the cherries the same day that they’re picked, and ferments them for the rest of the day in an open tank. In the evening, he washes the coffee three times, and then leaves it to dry on a patio, for around 4 days.
