The gravelly sand-clay soils in Montecchio Emilia are farmed without use of chemicals, using only organic fertilizers. Only indigenous varietals are grown including this Malvasia di Candia. Usinig only indigenous yeasts and a second fermentation in bottle are both old ways of making wine, winemaker Roberto Maestri is convinced that utilizing ancient approaches in both the vineyards and the cellars insure strict authenticity.
